MGM's Mike Mathis and Snapchef's Todd Snapkowski to Speak at SRC C-Suite Conversations and Cocktails

SPRINGFIELD, Mass., February 22, 2018 – The Springfield Regional Chamber’s C-Suite Conversations & Cocktails series will feature Michael Mathis, president and Chief Operating Officer of MGM Springfield and Todd Snopkowski, founder and CEO of Snapchef on Tuesday, March 20, 2018, from 5 to 7 p.m. at CityStage in Springfield, sponsored by Asnuntuck Community College

C-Suite Conversations & Cocktails features local and regional executives in a moderated, but informal conversation about their careers, lessons learned, innovation, and community engagement. Following the conversation, guests will have an opportunity to mingle in the lobby with the speakers over cocktails and hors d’oeuvres.

Carrie Saldo, host of WGBY’s Connecting Point, will moderate the conversation between Mathis and Snopkowski, which will begin at 5 p.m. Cocktails and hors d’oeuvres will be available at 6 p.m.

Michael Mathis is responsible for the implementation, development, and operation of MGM Springfield. He is a 14-year veteran of the gaming industry.  Mathis most recently served as Senior Vice President of Global Gaming Operations. He joined MGM in 2011 as Vice President of Global Gaming for MGM Hospitality. He previously served as Vice President of Legal Affairs and Assistant General Counsel for Boyd Gaming Corporation. Prior to that, he held the position of Vice President and General Counsel for Echelon Resorts and Corporate Counsel for Las Vegas Sands Corporation.

Mathis has a law degree from Georgetown University, and earned his Bachelor of Arts degree in Economics and Asian Studies from Dartmouth College.

Todd Snopkowski founded Snapchef in 2002 after he saw an opportunity to solve a problem in the food service industry. He carved a niche market for Snapchef to become the largest culinary training and staffing company in New England. Snapchef’s clients include major universities, hospitals, five-star hotels, major food service corporations, caterers, corporate cafeterias, and restaurants. The company also offers a range of food service and hospitality training and consulting services.

Snapchef’s headquarters are in Dorchester, MA. The company has offices in Worcester and Providence, RI. Snapchef opened a Springfield office on Worthington Street in Springfield in 2017.

Snopkowski was the recipient of the 2015 SBA Small Business Person of the Year Award for Massachusetts and the 2016 Citizens Bank Good Citizen Award.
